DRIED MINT

Mint is a particularly good source of vitamin A, a fat-soluble vitamin that is critical for eye health and night vision. It is also a potent source of antioxidants, especially when compared to other herbs and spices. It's used in chutney, pesto, sauces, dressings and mint tea. It can added to curries, casseroles and stews or used as a rub for racks of lamb. It can sprinkled over soups, salads, cooked vegetables, fresh fruit or yogurt.
